Cafe Rio Soup

Cafe Rio's Chicken Tortilla Soup is on the menu tonight! Yum! Its souper easy to make (see what I did there? ;))

Cafe Rio Soup

2 chicken breasts
1 tsp garlic powder
1 T. ground cumin
1/2 tsp chili powder
2 cups water
1 (16oz) jar Herdez Green Salsa 
1 can corn (drained)
1 can black beans (rinsed and drained)
chopped cilantro (I just toss a handful in)

Combine all ingredients in crock pot on low for 6-8 hours. Shred chicken before serving. (I pull the chicken out and shred in my KitchenAid. Makes shredding so much easier!) Top with cheese, tortilla strips, sour cream, more cilantro, limes, pico de gallo and guacamole. YUM!

9 Month Checkup

Had your 9 month doctor visit this week. You are one healthy boy! You are in the 83% for your weight, 67% for height, and 90% in head size. You weigh 21 lbs 13 oz, and are 28 3/4 inches tall. Your doctor just loves you, and thinks you're so cute! First thing she does when she walks in is call you "yummy" and squishes your thighs. She wants to eat you up :-) You only got 1 shot today, a flu shot. And guess what? You didn't cry! You are so brave! Since its rivalry week, your 9 month "prize" is a fancy BYU jersey! You'll be lookin good come game day. 

9 Months

 
Boston, you are 9 months old! You've been out as long as you were in. You are doing all sorts of fun things now! You crawl everywhere, can pull yourself up on couch, or pretty much anything. You can open cupboard doors, you like to pull things off shelves, and you've found my stash of wrapping paper that was under the couch. You are a great eater! Baby food is still hit and miss. You love pasta. Dad and I got you some pinwheel and bowtie pasta so you could pick them up easier, and you like to keep a noodle in your left hand just to squish it, and eat with your right hand :-) bath time is always soon after. You've never turned away a fruit or vegetable that wasn't puréed. I'm so lucky to have such a good eater! You still like your green hospital binkie and your blue mommies little man blanket. You can't (and wont) sleep without them. You love to be outside and LOVE to swing. You can sit in a swing for an hour and still be smiling! We love you Boston! :-)
