Reese's Cheesecake Brownies - YUM!



REESE'S CHEESECAKE BROWNIES
Found recipe at: Pip & Ebby
  • 1 fudge brownie mix (and anything it calls for)
  • 1 (8 oz) pkg cream cheese
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup creamy peanut butter
  • 1 (12 oz) pkg Reese's Pieces
  • 1 (12 oz) pkg milk chocolate chips
  • 3 Tbsp whipping cream
  • 12 large Reese's Peanut Butter cups (chopped)
Preheat oven to 350 F. Lightly coat a 9x13 pan with cooking spray.
Prepare brownie batter according to its directions and pour batter into the 9x13 pan and set aside.
In a large bowl, beat softened cream cheese until light and fluffy. Add in Sweetened condensed milk and peanut butter and beat until smooth. Stir in bag of Reese's Pieces candies.
Spoon Cheesecake mixture over brownie batter evenly.
Bake at 350 for 40 minutes or until cheesecake layer is set and edges are golden brown.
Let cool for 30 minutes then refrigerate for 30 minutes.
In a microwave safe bowl, add milk chocolate chips and whipping cream. Melt on high for 1 minute checking and stirring throughout so not to overcook. Heat until melted and smooth.
Pour and spread evenly over the top of brownies/cheesecake.
Sprinkle the 12 large chopped Reese's Peanut Butter cops over top.
Store Covered in refrigerator.

Extreme Couponing

Ok, i have recently recieved some "extreme" inspiration. Jeff and i made the mistake of going to walmart last night because i needed shampoo. I hate the Walmart we live by because anytime you go it is completely insane. But, i was out of shampoo, and I also felt pretty savy because i collected several buy one get one coupons for shampoo and conditioner. Feeling extremely proud of myself, we chose the least crazy checkout line, and still ended up waiting 30 min to check out. Why so long, you might ask? The lady in front of us was half way through her 3 chuck full - piled high cart check out. As the last item rung up, we were pretty sure she had to be close to $1000. She pulled out a novel full of coupons, and after another 20 min of scanning her coupons, (you will want to pay close attention to this next part) WALMART PAID HER $30 to take all of her groceries!!!! Are you kidding me!? We just stood there with our mouths to the floor, and this lady just laughed at me, and asked if i got the Sunday paper. Yeah, no, we don't get the Sunday paper. Apparently she gets over 5 copies, just for the coupons. Apparantely its worth it...so thus starts my obsession with "Extreme Couponing."

Brooklyn

I can't believe my niece will be six months this weekend! She has gotten so big and SO cute! I basically made a fool of myself trying to get her to laugh today, but it was so worth it! Being around her makes me so baby hungry! Jeff just needs to hurry and get done with school!! :)






Bee's Game!

I told Jeffy i wanted tickets to a Bee's Game for my birthday this year. I love baseball! I actually told him this last year, but he forgot, so i bought myself Bee's tickets for my birthday this year :) I figure i can say that because he never looks at this blog anyways. In fact, i can only think of 2 people who even look at this...haha. Anyways, here are some pics from the game:



Disneyland July 2011

Jeff and I had an AWESOME summer! Its so hard to believe its over and Jeff is back in school. Good news is that he only has two semesters left before he starts his teaching internship. He is hoping to get an internship at Wasatch High School in Heber City, where his dad is working in administration. We're crossing our fingers that things go well throughout the next year.
Anyways, to catch up on what happened this summer...
Jeff's parents took us all to Disneyland!!! Wahoo! Jeff's younger brother Brady got home from his mission in the end of June, and we took him back to tour his mission, but mostly to go to Disneyland :) We were there for two weeks, and on our last night in the park we saw Justin Bieber and Selena Gomez! Yeah, you read right. We saw famous people :) They actually got onto Thunder Mountain right as we were getting off, and my mother-in-law was the first to notice them. Anyways - here are a few pictures:

My New Favorite Cookie!


Oreo Stuffed Chocolate Chip Cookies
2 sticks softened butter
3/4 Cup packed light brown sugar
1 Cup granulated sugar
2 large eggs
1 Tablespoon pure vanilla
3 1/2 Cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
10 oz bag chocolate chips
1 bag Oreo Cookies

1. Preheat oven to 350 degrees F. In a stand or electric mixer cream butter and sugars until well combined. Add in eggs and vanilla until well combined.

2. In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo Cookie. Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough. Place onto a parchment lined baking sheet and bake cookies 9-13 minutes. Let cool for 5 minutes before transferring to cooling rack.

WE HAVE A NIECE!

Our first niece Brooklyn Alena was born March 18 at 3:44 pm in St. George. She is such a beautiful baby, of course because she looks like me! But seriously, she looks so much like a Roberts. I got to go down to see her last week, and i absolutely LOVE her! Enjoy the pics!
